Wild Hog Longganisa Fried Rice

Ingredients

  • 6 oz wild hog longganisa (uncooked)

  • 4 cups cooked rice, chilled

  • 3 large cloves garlic, minced

  • 2 tbsp soy sauce

  • 2 eggs, beaten

  • 1 cup frozen peas

  • 2 tbsp olive oil

Instructions

1) Heat a nonstick pan to medium-high heat. Add 2 tbsp of olive oil.

2) Add the garlic and fry until golden brown. Remove garlic from pan.

3) Add the longganisa and fry until meat is cooked all the way through (about 5-7 minutes)

4) Add the rice to the pan. Then add the garlic. Fold until all ingredients are mixed well.

5) Cook for 1 minute, then add the soy sauce

6) Add the peas and cook for another minute

7) Slide the rice away from the center of the pan. Then add the beaten eggs to the center of the pan

8) Carefully slide the egg from side to side until the eggs are almost fully cooked.

9) Mix the egg into the fried rice and transfer to a serving bowl

10) Share and enjoy!
