Chicken Sinigang

Chicken sinigang

Ingredients

  • 5-6 lbs chicken thighs

  • 1 cup cherry tomatoes

  • 2 red onions quartered

  • 1 pack sinigang mix

  • 8 cups water

  • 3 baby bok choy

  • 1 tbsp patis (fish sauce)

Instructions

  1. Season chicken thoroughly  with salt

  2. Heat a Dutch oven to high heat and add 1 tablespoon of olive oil

  3. In batches, sear the chicken for about 5 minutes per side.

  4. Drain all but one tablespoon of the fat.

  5. Add the water and deglaze the pot by using a wooden spatula to scrape the bits any browned bits of the chicken stuck to the bottom.

  6. Add the onions, cover and bring to a boil

  7. Add the chicken, and bring to a boil

  8. Add tomatoes and set the heat to low. Simmer for 30 minutes.

  9. Put in the sinigang mix and simmer for 2 minutes

  10. Add the patis

  11. Right before serving, turn off the heat and add the baby bok choy

  12. Serve and enjoy
