Chicken Sinigang
Ingredients
5-6 lbs chicken thighs
1 cup cherry tomatoes
2 red onions quartered
1 pack sinigang mix
8 cups water
3 baby bok choy
1 tbsp patis (fish sauce)
Instructions
Season chicken thoroughly with salt
Heat a Dutch oven to high heat and add 1 tablespoon of olive oil
In batches, sear the chicken for about 5 minutes per side.
Drain all but one tablespoon of the fat.
Add the water and deglaze the pot by using a wooden spatula to scrape the bits any browned bits of the chicken stuck to the bottom.
Add the onions, cover and bring to a boil
Add the chicken, and bring to a boil
Add tomatoes and set the heat to low. Simmer for 30 minutes.
Put in the sinigang mix and simmer for 2 minutes
Add the patis
Right before serving, turn off the heat and add the baby bok choy
Serve and enjoy
