Pinoy BBQ Pork Fried Rice
Ingredients
12 oz leftover Filipino BBQ pork
6 cups rice
4 tbsp soy sauce
1 tsp sesame oil
1 tbsp vinegar
3 eggs, beaten
4 cloves garlic, minced
1 cup frozen peas, carrots and corn
6 oz snow peas
3 tbsp olive oil
Directions:
Heat a wok over high heat. Add 1 tbsp olive oil.
Add the eggs and scramble until they are cooked all the way through. Remove from wok and set aside
Add 1 tbsp oil
Add the pea pods. Stir fry for 1 minute. Remove from wok and set aside
Add 1 tbsp oil. Add the garlic and fry until golden brown.
Add the pork. Stir fry for 30 seconds
Add the rice. Stir fry for 2-3 minutes
Mix in the soy sauce, vinegar and sesame oil. Stir fry until the rice is evenly coated.
Add the carrots, corn and peas. Stir fry for about 1-2 minutes.
Turn off the heat and mix in the egg and pea pods
Serve while hot
