Filipino BBQ Fried Rice

Ingredients

  • 12 oz leftover Filipino BBQ pork

  • 6 cups rice

  • 4 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tbsp vinegar

  • 3 eggs, beaten

  • 4 cloves garlic, minced

  • 1 cup frozen peas, carrots and corn

  • 6 oz snow peas

  • 3 tbsp olive oil

Directions:

  1. Heat a wok over high heat. Add 1 tbsp olive oil.

  2. Add the eggs and scramble until they are cooked all the way through. Remove from wok and set aside 

  3. Add 1 tbsp oil

  4. Add the pea pods. Stir fry for 1 minute. Remove from wok and set aside

  5. Add 1 tbsp oil. Add the garlic and fry until golden brown.

  6. Add the pork. Stir fry for 30 seconds

  7. Add the rice. Stir fry for 2-3 minutes

  8. Mix in the soy sauce, vinegar and sesame oil. Stir fry until the rice is evenly coated.

  9. Add the carrots, corn and peas. Stir fry for about 1-2 minutes.

  10. Turn off the heat and mix in the egg and pea pods 

  11. Serve while hot
