Grilled Chicken Adobo

Grilled Chicken Adobo

Traditionally, chicken adobo is slowly cooked in a clay or metal pot. In this version of chicken adobo, we are going to cook the dish using a charcoal grill. The chicken will be placed directly on a hot grill to get a nice char, then finished in a pan in indirect heat.


Ingredients:

5 lbs chicken drumsticks

Adobo rub (equal parts kosher salt, ground pepper, garlic powder)

1/2 cup soy sauce

1/2 cup white vinegar

1/2 cup Merlot

1/2 cup water

5 cloves garlic, crushed

1 tsp whole peppercorns

2 tbs olive oil


Directions:

  1. Add olive oil to the chicken. Season generously with the adobo rub

  2. Heat the grill to 500 degrees. Add the chicken and turn as needed for about 5-10 minutes, until they have a nice char.

  3. Place the chicken in a pan. Add the soy sauce, vinegar, Merlot, water, garlic and peppercorns to the pan. Seal pan with aluminum foil

  4. Place the pan back on the grill and cook until the internal temperature registers 180 degrees when checked with an instant read thermometer
