Adobong Manok sa Puti

Ingredients

  • 2 tablespoons vegetable oil

  • 8 cloves garlic, crushed

  • 5 lbs chicken thighs

  • 2 cups vinegar

  • 2 cups water

  • 1 tablespoon sea salt

  • 1 teaspoon whole peppercorns

  • 1 bunch green onions

Instructions

  1. Dry the chicken with paper towels.

  2. Season both sides liberally with salt

  3. Bring a Dutch oven to medium high heat. Add the garlic and sauté until golden brown. Set aside.

  4. Turn the heat up to High

  5. In batches in single layers, sear the chicken for 3 to 5 minutes per side.

  6. Drain and discard the fat.

  7. Add the vinegar and scrape the bottom of the Dutch oven with a wooden spatula

  8. Add the chicken and bring to a boil. Let it boil for 5 minutes uncovered.

  9. Add the garlic and peppercorns.

  10. Cover and set the heat to low. Let it simmer for about 30 minutes.

  11. Add salt and half of the green onions. Let simmer for 5 minutes.

  12. Serve by topping with the rest of the green onions.
